CJ, my question on the food part is did the whole family eat what you ate? I think I could manage cooking and eating lots of veggies and experimenting with recipies but the kids don't like to try new stuff too often.

Yes / No.

Consider I eat 2 meals (breakfast / lunch) at the office during the week. For these I'm free to make dang near anything and I've found that many of the "veggie" recipes happen to be 4-6 servings. This conveniently breaks down to meals for the week normally.

Dinner is generally eaten as a family (a strange concept nowdays obviously) on most nights. For these everyone normally gets the same "protein" but veggies may vary. I am (was) a bigger guy and generally ate more so I would many times opt for an additional veggie option (salad or something from the lunch pile of pre-made and put in rubbermaid to make it easy go). I've pretty much cut out potatoes and cut way back on most other carb intense foods. We've also found some lower carb / higher fiber / higher protein versions of things like tortillas, breads, sandwich thins, etc. and we've all switched to these primarily.

Now is also "soup season" which is a pretty easy way to load up on the veggies without a lot of calories / fat.

I'm also not a purist because I couldn't survive a "diet" like that. I eat some of the higher carb / fat foods but just know I have to adjust accordingly. One good thing for me is to exercise and burn off the calories I consumed because of that extra piece of pizza, a donut, etc. If I ran and burned 800 calories during the run, the pizza slice at 400 calories is tolerable. Not ideal, but it's a lifestyle change I can live with.

One thing we've done to get the kids into veggies is to let them pick something at the store and then we find recipes to use it. They have a stake in the game that way.

Planning our day tomorrow taking in the Fermentation Fest. Caches along the way, but not the main focus of our day for sure. Music, hopefully a stop for space music at The Painted Forest and I'm sure we'll be trying out any number of fermented foods along the way. Great fun!
