is there a way to see how many counties we have cached in on geo caching dot com
as far as I know no there is not, you would have to use a 3rd party program like GSAK
I believe you can do it from here:

they show counties cached in the U.S. now if it was able to take it down to the state of Wi.There is a GSAK macro that will create state maps of your completed counties, too.
