Hey all. I just wanted to share a very easy breakfast recipe that you can put in the crock pot and let it cook all night. What I like about it is you can add whatever you would like. I made this in a NESCO cooker last year for a hunting event and there were no left overs. I tripled the recipe and omitted the green peppers and onions and just did single layers. I used bacon, breakfast sausage and Canadian bacon and sliced ham and 3 different types of cheese. Add some mushrooms or frozen chopped broccoli and YUM YUM!
It’s also great to make the night before a big geocahing day.

1 – 32 oz. bag frozen hash brown potatoes
1 lb. cooked ham (or deli ham), chopped
1/2 cup chopped onion
1 green bell pepper, chopped
1 1/2 cups shredded cheddar cheese
12 eggs
2 tsps. of you favorite seasonings
1 cup milk
Spray inside of slow cooker with nonstick cooking spray. Place 1/3 of the frozen hash browns in slow cooker. Add 1/3 of the ham, green pepper and cheese. Repeat layers and end with cheese. In a large bowl, beat the eggs, milk and seasoning until well mixed. Pour mixture over the ingredients in the slow cooker, cover and turn on low. Cook for 10 – 12 hours, until casserole is set and eggs are thoroughly cooked.
