First off – You’re in possession of an illegal goose (according to DNR rules), but if the DNR asks just tell them someone gave it to you while you were geocaching after they tagged it.

Second – Goose is generally tougher, so roasting, smoking or something along those lines will be best.

Third – How come I don’t have luck like this?

My favorite is goose turned into pot pie. You’ll need to roast it first and then turn it into pot pie second, but it’s really good this way. My second favorite is goose breast wrapped in bacon and then smoked. Slice it thin for sandwich meat and you can’t go wrong.

The best recipe I’ve heard of calls for very little goose breast. I’ve also heard of goose breast stew which, again, calls for very little goose breast.

      I think I see a pattern here…

Goose is one of the “driest” dark meats I’ve ever had. I’ve had it prepared many different ways, but wild goose just doesn’t have much in the way of fat (normally). I do like it, but it’s not something I’d prepare for Thanksgiving dinner by swapping it for a good farm raised turkey.

Slow cook it in a crock pot, pour a mix of cranberrys in sauce with orange marmalade on top, and just let it cook about 6-8 hours on low. Tender and juicy that way!
