I’ll second the recommendation for Al. I know him through his kids who go to my friend’s family daycare (as well as my kid). He took a bunch of kids to the UWEC ropes course for a birthday party and my daughter had a great time.
Wow, sounds like a fun weekend. while I can’t vouch for the instructor, I can vouch for Beaver Creek Reserve! (We spend a weekend across the street at the Hobbs Observatory every August). Beaver Creek can boast about excellent trails, butterfly house and nature center.
